  • Quality Lemondage.

Preparation:

In a small pan, on a very low flame add the water and Maple Syrup.  Gently bruise the Jumpier Berries to release their oils and flavour, then add the back pepper.  Do not let boil, only gently heat.  Let the mix sit and cool at room temperature.  In ether a large cocktail glass or Collins glass, line the bottom of the glass with the washed lime leaves, also gently bruise the leaves and twist slightly with your fingers, to release the oils and flavour.  Fill with ice, then add the Two ounces of Roku Gin, top with lemonade, drizzle the Balsamic vinegar over the top, which should float to the bottom of the glass.  Stir gently, ensure not to disturb the lime leaves.  A golden twilight hue should form at the bottom of the glass, seen within the reflective light.

Background:

The "Solis '25 Dawn" cocktail is my homage to the year about to begin, 2025.  Yet, it is not a celebrational cocktail, but a drink based around an Oracle that is now unable to see the future, beyond the the dawn of the day.  As the sun (Solis) begins to descend into the ether and Twilight, with darkness that follows is the beginning of the end.  So, the cocktail is meant to evoke a sombre and paradoxically sobering stillness, that all is not well in the world.  The flavors are complex, with both a subtle, spice and sweetness infusion.  Japanese gin is not dry like Western gins, rather it holds a distinctness with its: Sakura (Cherry blossom) flowers, Yuzu Peel, Sencha Tea (Green Tea), Gyokuro Tea (Refined Green Tea) And Sansho Pepper.  Raku is also slightly over proof at 43%, therefor sip the Solis 25 Dawn in a meditative way, knowing that 2025 calamity will have to be faced, and then released.  But, be still, with stoic resolve.  The answers are not easily seen, as the darkness after the dawn will pass.
